Le Cercle Guiraud

MICHELIN GUIDE: ★

Le Cercle Guiraud brings a contemporary gastronomic dimension to Château Guiraud, with a cuisine that balances precision, character and a certain freedom of expression. Chef Yoann Amado, whose experience includes Éric Frechon at Le Bristol and Maison Claude Darroze, works with bold combinations and confident technique: beef and oyster tartare with horseradish and puffed rice, pigeon grilled over vine shoots, or Guanaja chocolate soufflé with Armagnac sorbet. Alongside him, pastry chef Juliette Bonnard brings freshness and finesse to the dessert menu. In warmer months, the mulberry-shaded terrace overlooking the château creates an especially appealing setting, placing the restaurant firmly within the landscape and atmosphere of Sauternes.
