WHY WE LIKE IT
Run by the Conseil Interprofessionnel des Vins de Bordeaux, this bar has no equal when it comes to grasping the full breadth of a vineyard one might think they already know. The list — around thirty exclusively Bordeaux wines, regularly refreshed — spans every colour and appellation: reds, dry and sweet whites, rosés, clairets, crémants. The setting matches: contemporary furniture, a monumental stained-glass window and an Aubusson tapestry inside an 18th-century building whose silhouette recalls the prow of a ship. Young, approachable sommeliers turn every glass into a geography lesson.
