L’Envers du Décor is a Saint-Émilion institution that predates the village’s tourist era. Founded in 1987 by François des Ligneris, taken over in 2017 by the Perse family (Château Pavie, Hôtel de Pavie), it has retained the soul of a winemakers’ bistrot: zinc counter, leather banquettes, retro décor, seasonal dishes from the market. The côte de bœuf, braised shoulder of lamb and Grand Marnier soufflé function as timeless signatures. But its hidden treasure is the terrace: tucked behind the dining room against the collegiate church wall, it offers complete calm in the midst of the village’s bustle. The wine list, assembled by a dedicated sommelier, covers Bordeaux and France’s other great wine regions.
