The centrepiece of Le Pressoir d’Argent is not on the plate but in the room: a solid silver Christofle lobster pres, one of just five in the world, whose table-to-table procession has become a house ritual. Gordon Ramsay signs a modernised classical menu deeply rooted in Aquitaine’s terroir, Gironde black truffles, foie gras, caviar, prime fish, elevated by three sommeliers presiding over a 1,000-bottle selection, two thirds of which are Bordeaux.
